Fibre 1 Flax Seed Morning Glory Muffins - 4g

There's a mouthful for a name, hey?

Today I made these muffins and my kids will not stop begging me for them.  I made 18 of them so that my big boys could take them to school as snacks and my little ones could snack on them at home.  Well, I'm not sure there will be anymore left for tomorrow.

I made 18 small muffins from the recipe, omitted the coconut and used almond milk in place of skim milk, so each muffin contains about 4 grams of fibre.

Tip: Almond Milk

I posted before that Almond Milk contains 1 gram of fibre per cup, but if you can find the Enriched Almond Milk, you'll get even more - it contains 3 grams of fibre per cup, and can be used anywhere you'd use milk - in baking, cooking (mac and cheese!), and smoothies.  :D

Tip: Red Split Lentils

We have discovered Red Split Lentils here.  They are marvelous!

They are tiny and have gone undetected in homemade cheeseburgers and in taco meat here.  In fact, I am wondering if they might have an addictive effect because with these babies in the taco meat, my kids ate WAY more dinner than they usually do (which is, actually, pretty much nothing...my kids aren't dinner eaters).

In 1/3 cup or 61 grams of Red Split Lentils, you will find nine grams of fibre, and as a bonus...15 grams of protein and 25% of the Daily Recommended Value of iron.  A Red Split Lentil is like a little meal in itself!  LOL

If you need more fibre, try adding some Red Split Lentils to a recipe.  They hide easily if you need that feature, they are inexpensive and great for you!
